These Coconut Squares are a super-fast snack/dessert recipe you can knock up in minutes and have in the fridge or have ready on a plate for guests to enjoy.
There’s literally nothing to this recipe, you just throw everything into a blender and off you go. The MCT oils in the coconut oil make this a relatively healthy dessert. MCT oils are easily absorbed by the body and used as fuel instead of being stored as fat. The goji berries are a superfood in their own right, they are a natural antioxidant and offer protective benefits in the body, such as preventing free radicals from damaging proteins, lipids and most importantly, DNA. They have also shown in research to possess anticancer and antiaging effects, improvement of immunity and enhancing hemopoiesis (production of new blood cells and platelets) [1].

Just pour the mix onto a lined tray and press it flat and even and put it in the fridge for 2 hours (or freezer for 45-60 minutes if you want it in a hurry).
Then take it out and slide it onto a chopping board and cut it into even squares. Easy!

These Coconut Squares are a super-fast snack/dessert recipe you can knock up in minutes and have in the fridge or have ready on a plate for guests to enjoy.
Ingredients
- 60 grams of shredded/desiccated coconut
- 10 grams of sunflower seeds
- 10 grams of pumpkin seeds/pepitas
- 10 grams of goji berries
- 1 tablespoon of açaí powder
- 85 grams of rice malt syrup
- 35 grams of virgin coconut oil
- zest of 1 mandarin
- pinch of salt
Instructions
- Put all the ingredients in a blender and mix well until completely combined.
- Stop and scrape down the sides of the blender a couple of times to make sure it is well mixed.
- Line a baking tray with a splash of water and some cling film/glad wrap.
- Pour the mix into the tray and press flat, I put another sheet of cling film over the top and press another tray down on top to make it even.
- Put the tray in the fridge for 2 hours or the freezer for just under an hour to set. Once it is completely firm, slice into squares and serve immediately.
- Store in the fridge for up to a week, it probably won't last that long though! Enjoy
